The production is the result of the cooperation between the bee and Marchalina Hellenica (honey-producing granular that co-exists harmoniously with pine). The pinehoney does not generally crystallize, because the pine has low sugar content. Production takes place twice a year, in April and from August to November. The honey is sold in glass containers of 950g, 450g, 250g and 30g, in metal boxes of 13 kg, 7 kg, 1kg and 455g, and in plastic pails of 1.5kg and 3kg.
Sithon has been awarded with two stars by the International Taste and Quality Institute (ITQI) in the years 2010, 2011, 2014, 2015 and 2017.
